Baking recipes in parchment paper is a centuries old tradition. In various countries throughout the world they have fanciful names in their own language and equally creative and tasty dishes utilizing local ingredients.
One of my first exposures to this uncommon cooking method was with salmon. A few thinly sliced vegetables, some herbs and spices, topped with a slice of lemon and enclosed in parchment. Baked to perfection and opened at the dinner table it's a wow for the whole family.
But today's recipe is going to give you the opportunity to have put the WOW at the end of the meal, with dessert. This is a simple yet effective recipe that where each of your guests will think you are the most wonderful cook.
Raspberries Apples in Parchment with Vanilla Ice Cream
4 Tbl raspberry jam
2 Golden delicious apples
2 tsp fresh lemon juice
2 tsp white sugar
2 tsp Brown sugar
1/2 tsp cinnamon
about a dozen fresh raspberries
1 pint vanilla ice cream
8 pieces of parchment paper, 8 to 9” round
Preheat oven to 350°
Place 4 of your round parchment papers on a clean work surface and spread 1 tablespoon of raspberry jam in the center of each. This does not need to come all the way to the edge.
Peel apples and cut out core. Cut apples and half and thinly sliced each half apple. Fan the slices of each half apple over the raspberry jam. Drizzle 1/4th of the lemon juice over each half apple. Combine the two sugars with the cinnamon and sprinkle over the top of each dessert. Cover each mixture with the remaining 8 inch round piece of parchment, turning up the edges to seal completely.
Bake these packets on a baking sheet for 17 to 20 minutes. Remove from oven and allow to cool for approximately 5 minutes. Open each and top with raspberries and a scoop of vanilla ice cream.
